KOMPAKTO. Maximum capacity in the minimum space

In the area of ​​modern catering and food service, there is an element of capital importance that must be taken into account: the organization of space. Smaller and smaller spaces in order to reduce operating costs. Space requires a new way of conceiving the product: multifunctional, efficient, small size. In a word, "KOMPAKTO".

The Kompakto range, both electric and gas, offers a multi-tray system to adjust the trays to the required height. In this way, we can take full advantage of the internal capacity of the oven, without losing useful cooking space. It also offers a reversible door system on request. The GAS range is controlled with a state-of-the-art touch panel, so we can include the auto-washing system, and a boiler for low temperature cooking. Unique in its category.

This range produces steam much faster with respect to a traditional system. Using two methods in symbiosis (direct steam + boiler) the steam stabilizes when the instantaneous production decreases due to the cooling of the electrical resistances, the boiler starts to operate automatically.

METEO SYSTEM: To extract excess moisture, quickly and completely, a valve releases the pressurized air from the firing chamber. The special moisture control system METEO allows the precise consumption of water with minimal waste, the steam produced is optimized according to the actual cooking needs. In fact, the water that is needed to reduce the condensation of steam is used in a more rational way, which further reduces consumption.

VAPOR OPTIMIZER: It allows to determine both the quantity and the quality of the steam in the firing chamber. The STEAM OPTIMIZER allows the user to adjust the degree of steam hydration to the precise level of dryness or humidity depending on the type of cooking desired. Although considered to be of superior quality, "dry" steam is not always suitable for food and the desired effect. When cooking large foods or with particularly dense fibers, it is advisable to use steam with the appropriate degree of hydration and penetration, so we cook food faster preserving tenderness.

Our Kompakto with touch screen are available in two versions with different types of steam:
BOILER VERSION • Combined boiler + direct steam system, which integrates a high efficiency boiler with steam generation
DIRECT STEAM VERSION • With the instant steam generation system: the water is vaporized on the electric resistances.
